Honey is one of the products bearing the largest mythological tradition in all histories in the world. In Greece, however, it had a special value. It was considered food of the Gods of Olympus (ambrosia). Natural, healthy, useful for the human body, honey has been praised in the ancient classical philosophical thinking, in history and in poetry as very few things in the world. Also, with the certification of empirical results, honey has been broadly used in alimentation, in medicine and pharmacology as well as in various social, religious and other aspects.

That is probably why certain varieties of honey (e.g. thyme honey) do not exist anywhere else in the world.
There are varieties that come from coniferous trees (pine, fir, chestnut, oak, e.t.c.) and others that come from flowers and aromatic plants (tea, oregano, sage, savoury, lemon, orange, health, e.t.c.).
As a result of the peculiarities of greek landscape, greek honeys come from a large variety of plants, where a certain flower always dominates the rest and so it characterizes that particular variety.
It is the number of these varieties that makes greek honey supreme, along with:
